Dubonnet, a spicy fortified wine with the bitter tang of quinine, is a great choice to replace vermouth if you want to shake up a traditional cocktail. This drink substitutes the traditional vermouth in the Manhatten with Dubonnet Rouge, and is called the Dubonnet Manhattan or, as I prefer, The Cat-Hatten, named for Madame Dubonnet’s famous pussy.
The Cat-Hatten
1 1/2 oz Makers Mark Bourbon
1 oz Rye whiskey
2 oz Dubonnet Rouge
2 dashes orange bitters
Lemon twist
Stir bourbon, rye, Dubonnet, and bitters together with ice, strain, garnish with lemon twist.
